At Les Roches, this is exactly what happens every two weeks during term time with their innovative Restaurant Lab program.

The idea behind the Lab Bistro is to immerse first-semester students in the world of entrepreneurship, giving them a hands-on experience of setting up a professional F&B offering from scratch. The program is designed to divide participants into two groups: one group takes on roles in the kitchen, while the other is responsible for service.

Every two weeks, a new cohort of 10 students joins the Lab, providing an opportunity for them to learn and grow. However, it's not just ideal for these students; the course is equally beneficial for all Les Roches students. In fact, around a third of their alumni go on to become entrepreneurs in hospitality, many operating their own restaurants.

Service Instructor Ebru Macarrao explains that the goal of Restaurant Lab is to provide an immersive experience for students, allowing them to discover what it takes to create a successful pop-up restaurant concept. With just two days to prepare, participants must set menus, create recipes, buy ingredients, and prepare their kitchen for action – all while getting their service team ready to bring their concept to life.
